December Daily : Day Three + a recipe.

And it looks like Cottage Living does not have the recipe up for the Coffee Cake Muffins yet. Here you go:

Coffee Cake Muffins from Cottage Living (12/2007)
Makes: 12 Muffins
Prep: 10 Mins
Bake: 20 Mins
Cool : 10 Mins

2 1/2 cups all purpose flour, divided
1/2 cup firmly packed light brown sugar
1 1/2 t ground cinnamon, divided
14 T unsalted butter, cut into pieces, softened and divided
1 T baking powder
1/2 t kosher salt
3/4 cup granulated sugar
2 large eggs, at room temperature (remove from fridge + set in bowl for 30 mins)
3/4 cup milk
1/2 t vanilla extract
powdered sugar (optional)

1. Preheat oven to 350. Line a muffin pan with paper baking cups.

2. Combine 1/2 cup flour, light brown sugar, and 1/2 t cinnamon in a small bowl. Cut in 4 T butter with a pastry blender until streusel is crumbly; set aside.

3. Sift together remaining 2 cups of flour, remaining 1 t cinnamon, baking powder and kosher salt in a medium bowl. Mix sugar and remaining 10 T butter in a separate bowl at a medium speed with an electric mixer until well combined. Beat eggs, one at a time, into butter mixture until blended. Add flour mixture alternately with milk, mixing until smooth. Add vanilla, and mix well.

4. Divide batter evenly among baking cups, filling about 3/4 full. Sprinkle evenly with reserved streusel topping.

5. Bake at 350 for 20-25 mins or until springy and wooden pick inserted in center comes out clean. Cool in pan 10 mins on a wire rack. Dust with powdered sugar before serving, if desired.

    I really like to see the progress of your Christmas Album. I like how the journaling floats over the Christmas photo for Day 3. Thanks so much for sharing. Really inspring me to start one - even though we're 3 days in... And thanks for explaining the backs of the photos, too (fr CK website).

    Thank you SO MUCH for posting the recipe. Your picture sent me a-hankering for some coffee cake muffins, and I had to settle for a sub-par recipe. ;) This one looks like what my mom used to make. Yummy!
    We made our own advent calendar (based on your/Martha's idea) out of wedding favor boxes. My girls stamped the dates along with winter/Christmas images on the tops, and we filled them with scheduled and unscheduled activities (and the TV listings for all the faves like Charlie Brown, too!). We are loving it, especially me because I'm not worried we'll do too much or miss something we want to do. Whew.
    Also, thanks for the December Daily idea & link. I've been taking lots of pictures, doing a digital layout, and have posted three of three days on my blog. Good way to stay grateful. :)

    Okay so here is me trying to wrap my brain around the clear album thing-- I don't see any adhesive peeking through on the back of your journaling for day three.
    Is there a super cool adhesive I don't know about?

    Mmm, that recipe! Turned out wonderfully, and I got a great magazine as a bonus. :) A link to some my fave crumb cake recipes for you: . I've made almost all of them over the years, but the cinnamon is especially good & easy & wintry.

    Thank you so much for doing the daily album for us, Ali. It is such a beautiful thing and gives me so many ideas for things I can do. I am still reading your book, bits at a time, and I am your newest fan. I am gradually switching over from digital scrapping to hybrid scrapping and I found you through someone else's blog. Now I can't seem to find enough of your stuff to read. I have ordered your other books through the CK sale and can't wait for them to get here. Is a fourth book underway?

    It is so wonderful that so many of us are getting into the holiday spirit and sharing so much cool stuff. I am writing down 10 things I'm grateful for every day and then I will make a piece of art with it later. So far it amazes me that just 10 things are so easy to think of. I realize my life is much more amazing that I had actually thought before... mad eh? Cool. LOVE your album. So exciting to see snippets posted regularly, and I bet you are glad the prep is out of the way and just filling in the fun stuff is all that is needed. I like that idea a lot.
