My Favorite Mac + Cheese


Last night I made my favorite mac & cheese recipe and wanted to pass it along.

I got this one from a friend almost ten years ago and I have made it many, many times over the years. I added my own notes to the recipe in brown.

Macaroni & Cheese
from Tracy Allbright

2 ½ cups Macaroni [I've use both big & small macaroni and they both work fine]
4T butter
4T flour
2 cups milk [we use non-fat]
1 tsp salt
1 tsp sugar
½ pound processed cheese (velveeta) cubed
2/3 cup sour cream [light or fat free is fine]
1 1/3 cup cottage cheese [light or fat free is fine]
2 cups sharp cheddar grated
1 ½ cup soft breadcrumbs
2 tsp butter
paprika sprinkles

1. Preheat oven to 350 degrees.


2. Cook and drain macaroni and place in a 2 ½ quart casserole dish.


3. Melt butter over medium heat in a large saucepan; stir in flour and mix well. Add milk and cook over medium heat, stirring constantly until sauce thickens. This part takes some time - be ready to stand at the stove for a bit - it's worth the effort! Add salt, sugar, and processed cheese; mix well.


4. Mix sour cream and cottage cheese into sauce and pour over macaroni; mix well.


5. Sprinkle grated cheddar and crumbs over top. Dot with butter and sprinkle with paprika. May be frozen at this point.


6. Bake in preheated oven at 350 for 45-50 minutes. Serves 6. Makes great left-overs.

    Thanks for this recipe Ali! My daughter loves Mac and Cheese and I'm afraid all I know is the ones you pop in the microwave... not a wise choice health-wise I'm afraid. :-(
    We'll definitely try this one and I don't mind standing in the stove for a while! :-)

    I am new to your blog. I found my way through Jennifer M. and Nichol M. Very talented ladies as you are too. I am learning so much from your site. Your idea inspire me. Oh and I so love your staps. I am slowly collecting them. I love how Nichol uses them on her layouts.

    Mmmm...sounds delicious, even at 10 am! I agree w/Dawn Morgan--I gained 5 lbs just reading the recipe! We're (Southern California) supposed to have cooler weather the next couple of days and this sounds like a perfect recipe for cool weather nights. Thanks for sharing!

    I have a teenage son who has Autism. He cannot speak, but he can get his point across. His sweet teacher sends me an email everyday about his day. This is what she wrote yesterday, I thought this was fitting with your recipe post today:
    " He loves the school Mac & Cheese so we asked for an extra serving. He got at least 4 but as wonderful as that was he would have
