Menu Planning | Week Of April 23rd, 2018

Last week ended up being as crazy as I thought it was going to be in terms of getting ready for Story Camp - love getting to spend a few days with like-minded storytellers. I did end up using my instant pot to cook a whole chicken - it turned out a little dry so I will adjust the cooking time next time to be a bit less. I also didn't end up making the sausage sheet pan recipe so I'll try that another week in the future. 

This week the whole crew is here most of the week so I've got a fairly solid plan in place that includes a few new recipes and a few that are fairly standard around here. 

Here's what I'm planning for this week:

  • Monday // Spaghetti (zucchini noodles for me) - for this I'm just using Trader Joes Marinara (which I like because it's sugar free) and mixing in some ground beef or ground turkey.
  • Tuesday // Dairy-Free Gluten-Free Vegetable & Black Bean Enchiladas from Yum Universe - I'm going to use this recipe as a starting point.
  • Wednesday // Yumm Bowls - we have a local restaurant here called Cafe Yumm that makes an awesome sauce to use with bowls filled with brown rice, black beans, etc. I'll be buying some sauce and then we will make the bowls at home - really great way for everyone to choose what they want in their own bowl. 
  • Thursday // Vegan Cesar Salad from Oh She Glows + sliced chicken for anyone who wants it.
  • Friday // Pot Sticker Stir Fry from Nom Nom Paleo (most likely going to serve with lettuce wraps).

    Ali, do you find the the 6qt Instant Pot is big enough when you're cooking for the whole crew? We'll have 3 of the 4 kids home this summer, and I'm wondering if I should go with the 6qt or 8qt option.

      I've cooked two things in it so far - the whole chicken and kahlua pork. Both were enough :).

      I love the 8 quart size. Easy to make large batches and larger diameter for sauteeing.

    That’s my favorite ceasar salad! I serve it for entertaining a lot and it is always a hit. My favorite version is the one on the app (but they’re all good!) Looking forward to checking out some of the other recipes in this post.

    Ali - I haven't been reading your blog as regularly lately, life got in the way :) I recently found out that my kids and I have some thyroid issues, and when I started doing research and I realized that cutting gluten (and possibly dairy and soy) is the direction we're headed. I'm a little daunted at the idea of getting the kids (ages 11 & 8) on board, and thought "I wonder if Ali has done any of this before?" Low & behold - you now post meal plans! Any thoughts or tips for a mom just getting started? If you already have this information somewhere that you can point me to, that would be great too. Thanks so much - I just love reading your blog and playing along with your scrapbook projects! -Kelly
