Tofu pudding.
One of the things we picked up at the store last week was a pudding mix. Simply blend a package of tofu in the mixer, add the pudding mix, blend for a couple minutes until creamy...and voila: non-dairy pudding.
The problem? It is just not the same.
Simon seemed to like it at first. Saying, "mmmmm." But it did not hold his interest for long. Chris and I each took one bite and were pretty much done. While it is rich in protein...it is lacking in puddingness.
It was worth a try. Probably won't buy that one again.

Are eggs a no too? (Forgive my ignorance here.) If they're not, I can put together a recipe for creme anglaise using soy. It's rich in puddinggoodness.
